Simple ways to serve
- Chilled & fresh — straight from the fridge on a hot day is hard to beat.
- Cherry & feta salad — halved cherries, crumbled feta, arugula, a splash of balsamic.
- Grilled cherries — skewer and grill briefly, spoon over vanilla ice cream or yogurt.
- Cherry compote — simmer pitted cherries with a little sugar and lemon for pancakes, oatmeal, or cheesecake.
- Freeze for later — pit, freeze on a tray, then bag for smoothies and baking all year.
Baking favourites
Lapin and Staccato both hold up beautifully in clafoutis, galettes, pies, and muffins. Their firm flesh means they don't turn to mush.
